Ordering choices:

• Whole lamb:
• You get to choose between cuts where there are options
• Leg of lamb (bone in or boneless)
• Loin chop or rack of lamb, or some of both.
• Shanks or ground
• Shoulder roast or steaks & ground.
• You get to choose thickness of cuts for chops and steaks.
• You pay for processing cost plus cost per live pound weight.
• Processing cost: $85/lamb, cost per live pound: $1/lb.  Average live weight per lamb:100lbs. (thus average cost is $185 for a lamb’s worth of meat).
